Thai Yellow Curry Deviled Eggs

Be the talk of the party with these non traditional deviled eggs. I've become the go to deviled egg lady in our friend group. Now that I'm actually getting the eggs from my backyard, these little treats are next level.


(12) Eggs

2 TBSP Mayonaise

Black Pepper (Fresh ground if you're fancy!)

Piping bag

Super cute egg plate - Optional (Not really)





Step 1 - Boil the eggs. 10 - 12 mins.


Step 2 - Peel the eggs. This is going to be the best thing you learn here. My dad taught me this trick and now I'm teaching you. Once you drain the hot water from the pot, crack the shells and then add cold water right away. Let sit for 2 minutes. Dump the water and add cold water again. Let sit for 5 mins. The cold water causes the egg to shrink just a smidge. Since the shell is broken, it draws in a little water between the shell and the egg and makes peeling easier and the egg prettier. Step 3 - Slice the eggs in half and pop the yolks into a cereal bowl.


Step 4 - Add the mayonnaise, Thai yellow curry sauce and black pepper (to taste) to the yolks. Stir like crazy!

Step 5 - Spoon the mixture into a piping bag. Fill each half egg white to create a little mound on each. If you don't feel like getting this fancy, you can spoon directly into the half egg whites. Or if you just forgot you don't have piping bags, you can use a ziplock bag and cut the corner off. Or use this reusable cupcake decorating injector and feel good about not wasting plastic. Bonus: Its super easy to clean. Again, you're welcome!!


Step 6 - Here's where that super cute egg plate comes in. You can also use an adorable or funny egg plate. Your choice. There are a million out there. Fill the egg plate with your delicious deviled eggs and watch them disappear!
