Spicy Soyrizo Breakfast Burrito (Not that spicy!)

Breakfast Burrito

This is an easy breakfast (or lunch or dinner) recipe that features eggs in a spicy way. I make mine with Soyrizo, but swap out for whatever you want. No one is going to stop you!


4 Eggs

2 Flour Tortillas (Burrito Sized)

1oz Soyrizo (Or half the tube)

1/4 cup Onions (diced)

1 Avocado

1 Tomato (diced)

Cotija Cheese (crumbled)

Cilantro (chopped) (optional)



Step 1 - Heat a tbsp of olive oil or butter in a large frying pan. Sauté onions for 2 mins until clear. Add soyrizo and cook for 3 more mins. Mix together then move to the side of the pan.


Step 2 - In the same pan (because who like doing a bunch of dishes) crack and scramble the 4 eggs. When almost fully cooked, mix with soyrizo & onion mixture, then cook until no longer wet.


Step 3 - Just before finishing the egg mixture, place your tortillas, one at a time, on top of the mixture to warm them up. Then place each on a plate.


Step 4 - Ingredients assemble! Split the egg mixture between the tortillas. Sprinkle on the diced tomatoes, cotija cheese and avocado. I like to use a spoon to scoop out the avocado in chucks or you can use a fancy avocado slicer. Then drizzle on the Crema Mexicana. You can choose to add the yellowbird hot sauce now, or dab it on bite by bite like I do. You can also add chopped cilantro if it doesn't taste like soap to you. IYKYK.

Step 5 - Roll with it baby. Tuck the ends over. Fold one side across, squeezing the ingredients together as you slightly roll it. Then tuck the sides of the remaining flap in a bit before folding over and closing the burrito. If you've done it right, it should feel tight and the stuffing fall out as you eat because it so full of goodness. The larger the tortilla size, the easier it will be. Enjoy!
