Baked Egg & Avocado

The perfect lazy weekend brunch. It can be as simple or complex as you feel like doing. Easy to make a few or a bunch for guests.


2 Eggs

1 Avocado

Olive Oil

Seasoning


Optional Toppings - Sautéed tomatoes & basil or onions and mushrooms.


Step 1 - Preheat oven to 400.


Step 2 - Slice the avocado in half. Scoop out a little more from the hole to make room for the egg.


Step 3 - Drizzle a little olive oil in the hole and swirl it around to cover the whole area.


Step 4 - Crack an egg into the whole. Sprinkle with your preferred seasoning. I use Gertie & Babs Disco Chicken. You can also top with finely diced veggies at this point. Or just keep it simple.


Step 5 - Bake in the oven on a cookie sheet or casserole dish for 20 mins. Longer if you prefer a less running eggs. (Not sure why you would. Running eggs are delicious.)



Serve in a small bowl or ramekin and dig in! Of course I love these blue ones from Amazon. Goes great with any style of potatoes. Try making your own with a lattice potato slicer. Enjoy!
